Spinach and Egg Muffins

This is fast, low-cal, easy recipe perfect for a weekend brekkie! Great for any dieter on Step 2 and above.

Ingredients:
cooking oil spray
½ cup baby spinach
¼ red capsicum
1/8 red onion
2 free-range eggs
2 tsp grated reduced-fat cheddar cheese

Method:
1 Preheat oven to 180°c. Spray two large muffin tin holes or ramekins with cooking oil and divide the spinach across the bases. Finely chop capsicum and onion.
2 Crack an egg into each muffin hole/ramekin and top with capsicum and onion. Sprinkle over grated cheese.
3 Bake for 10-12 minutes until cheese is golden and eggs have set.
