Ingredients
150g Skinned and boned chicken breasts, diced
10g Cottage Cheese
Garlic granules
1/2 tsp Golden Vegetable
1 tsp Soy Sauce
Pepper to taste
Chilli flakes
1/4 tsp Garam masala
40g Mushrooms, sliced
20g Spinach, sliced
20g Broccoli
This is a delicious meal that the whole family can enjoy!
Method
- Place chicken with the mushrooms and fry with the garlic and Golden Vegetable until lightly browned on either side.
- In a separate bowl, mix together the soy sauce, pepper, chilli flakes and garam masala, then add to the chicken and mushrooms.
- Cook for a few minutes on medium heat so the flavours infuse and the chicken is cooked through – stirring continuously.
- Turn off heat and add the spinach, cook down until wilted.
- Add cottage cheese and mixed through
- Divide between 2 shallow bowls and serve immediately sprinkled with coriander.
Vegetarian option
Instead of chicken, use a 125g pack of firm tofu, cut into cubes. The calories, fibre and carbs will stay the same but it will add 5g fat per serving.
Step it up…
To enjoy this dinner on Steps 3 and 4, add a sliced red pepper and 1 large carrot, cut into matchsticks. Serve with boiled rice (40g uncooked dry weight) and this will add 1g fat and 45g carbs per serving.
